Grilling Season
Summer is here and it's time to grill...

Summer is easily my favorite season. I love spending time outside during the hot days and long nights. It's also the start of grilling season (though it never really ends for me). I love the delicious, smoky flavor from grilling. It adds more dimension and makes eating my vegetables a bit more interesting!
I love to grill up a ton of food on the weekend and then use them for healthy meal prep during the first few days of the week. It's much easier to plan out the entire week, cook a big batch of food twice a week and then portion it out for the following days. Between the new puppy and my usual morning routine of checking work emails, yoga and meditation before my shower, there isn't a lot of extra time to make up lunches.
Grilling is great because you can do the usual burgers, hotdogs, steaks, chicken and vegetables, but you can also use the grill to get a unique taste on fruits and even cheese! Pineapples and peaches taste great grilled as it brings out the sweetness. You can also grill Halloumi cheese. This is the only type of cheese the won't melt when you grill it. I like to brush it lightly with olive oil before grilling to keep it from sticking.
